Joy in the Form of a Cookie

Katie is currently at one of the National Christ In Youth conferences with 41 other high school students from church. I would love to wax poetic about the spiritual implications of this yearly gathering and what it has meant for both my kids, but I’ll save that for later. Right now I want to tell you about something very near and dear to my heart and the part her attendance at CIY plays.

Peanut Butter

That’s right. Instead of extolling the virtues of a week long forum full of life-changing workshops for my impressionable teenage daughter, I’m going to relate a joy which can only be experienced while she is absent.

For weeks, if not months, I’ve been planning on making peanut butter cookies while she was gone. I made them Sunday night and, while the cookies were just fine, the batter was stupendous. Surprisingly I still ended up with four dozen chunky peanut butter cookies. They ended up being a little too crispy for my tastes – not that it kept me from eating them – and Dan at work told me to put a slice or two of fresh bread in the bag with them. The next day the bread would be hard and the cookies would be soft.

Not knowing whether I should believe Dan or not, I decided to throw a piece of bread in the Tupperware with the cookies. Todd was even more skeptical than I was. It was Dan who told me this, after all. But the next morning Todd came in the room with a look of complete awe on his face. “Dan was right,” he told me. “The cookies are soft.”

Since then I’ve found out that some people put bread in with their brown sugar to keep it from going hard. I also learned that my cousin, Tiffany, uses a cup of honey instead of a cup of brown sugar. Guess what I’m making when Katie goes on her mission trip at the end of July!
