Terri and I stayed at Mom and Dad’s apartment and Wednesday morning we lazed around for a bit: sipping coffee; eating zucchini bread; and catching up. Finally we got dressed and Michele came over to take us exploring. Mom and Dad stayed put and we girls went to Aztec Ruins National Monument. When I say “we girls” I mean Terri, Michele, myself and Precious.

Walking around ancient ruins and trying to figure out how these primitive people could make such detailed and complicated structures makes one hungry. So we drove up (or maybe down) the road and ate a light lunch at Blake’s Lotaburger. If you’ve ever been in New Mexico you know it’s a non-Mexican food must. That’s just the way it is. So now you know.
We drove around a little bit more, then went back to the folks’ place. Why did we eat a light lunch? Because this was the night for green chili enchiladas – New Mexico style. They’re not rolled, they’re stacked. And they’re more delicious than anything else in the history of good food. I’m not joking. Curse them and their scrumptiousness. I was so enamored with the eating of them that I forgot to take a picture. It’s probably better that way, though, because a photo might make me cry. To complete the green chili enchilada experience I washed them down with a Dos Equis. It seriously doesn’t get any better than that.
